Method
In a food processor blend almonds into a flour-like consistency. Add pitted dates, lemon juice and coconut oil. Continue blending until you reach a smooth consistency. 
Shape it into your desired size bites. Roll these in the shredded coconut.
Store it in an airtight container and keep it refrigerated for up to 2 weeks.

 - 2 tablespoons lemon juice
 - 1 tablespoon coconut oil
